Beauty all around me

This week I am grateful for the beauty all around me. Sometimes I am overwhelmed with just how beautiful this world is. It really is magnificant to behold.

This is the fantastic sunset off our balcony.

Ultimate Strawberry Shortcake

1 quart Fresh Strawberries
Sugar to taste

2 1/3 cup bisquick
1/2 cup milk
3TBSP butter
3 TBSP sugar

Whipping Cream
Vanilla
Powdered Sugar

Vanilla Ice Cream

1. Remove Stems from berries and chop. Mix with sugar to taste. Set aside.

2. Shortcakes: mix bisquick and sugar. add melted butter and milk. Shape into biscuit sized shortcakes or drop by large tablespoon onto ungreased cookie sheet. Bake 325 for 10-12 minutes until lightly golden.

3. Mix whipping cream, about 1 tsp vanilla and sugar to taste on high speed until soft peaks form.

To serve: spit hot shortcake top with vanilla ice cream, then strawberries, whip cream, next shortcake top, more berries and whip cream. Fabulous!
